Peanut butter protein balls

The peanut butter brownies were not much of a success, baking with protein powder often creates a strange rubbery texture and those were no exception. So I went on the hunt for a no bake recipe that sounded good. This recipe is so easy to make, you just mix all the ingredients together in a bowl, shape them then roll in cocoa or dessicated coconut. I think I made the mixture a bit too wet as they set more like a toasted tea cake shape rather than a ball but they taste really good and could be easily adapted into more of an energy ball through the inclusion of oats rather than the sesame seeds or coconut.

Here's the recipe:

  • 4 tbsp cocoa powder

  • 4 scoops vanilla or chocolate protein powder

  • 100g peanut butter (or almond)

  • 4 tbsp sesame seeds or dessicated coconut (or oats if you want some more carbs for an energy ball)

  • 4 tbsp honey

  • 2 tsp cinnamon

  • 2 tsp vanilla extract

  • 4-8 tsp milk to bind

Here's the method:

  • Mix the ingredients together, adding the milk at the end a tsp at a time to get a good consistency that holds a ball shape

  • Split the mix and roll into 6-8 balls

  • Roll each ball in either cocoa or dessicated coconut

  • Place on grease proof paper and chill

  • Enjoy
